The Eggs Benedict has been on our pedestal for a while – something we know we’ve wanted to cook but never had the grits to give it a try. But, there’s no time like the present so let’s get crackin’.
- White vinegar
- Ham slices (or “Canadian bacon”)
- Lemon juice
- English muffins
- Salt and pepper
- Cayenne pepper
Wow, these turned out great. We had anticipated issues with the poaching of the eggs – arguably the most difficult aspect of this recipe – but had success with all four of the eggs. The most surprising part of this recipe was learning that hollandaise sauce is actually just raw egg yolk with some other ingredients. I wouldn’t have imagined that.
