Meal #55: Loaded Baked Potatoes

At certain points in the year we find ourselves with more potatoes than we can account for in the dark recesses of our cupboards. Before they begin to sprout, we’ll turn them in to something tasty.


  • Potatoes (any kind will do)
  • Ground beef
  • Mushrooms
  • Jalapeno
  • Mozzarella cheese
  • Butter
  • Taco sauce
  • Arugula
  • Olive oil

Finished Product

Compared to a regular baked potato – where you might be lucky to get butter and cheese as toppings – the loaded baked potato is far more fulfilling and nutritious.
